Their fermentation takes place in stainless steel and cement fermenters only using indigenous yeasts. The objective is to create a wine that carries the aroma and flavour of the area. For this reason, Brunello di Montalcino is always aged in 30-hectoliter Slavonian Oak barrels for about three years. Before being bottled, Brunello is transferred to concrete tanks to await the DOC and DOCG certification. After the filtration process, it is bottled and put to rest for another ten months to produce Brunello di Montalcino and five years for the Riserva version.
